I'm only really familiar with Gmail... So this only covers half the equation. $somehow setup O365 to forward mail to user+o365@gmail.com. Setup a Gmail filter for all mail !to:user+o364@gmail.com and that filter will forward to o365.
Probably not perfect, since you can still receive mail without you being in the To: header. Hmm
