When you iterate over the results, can you instead iterate over (from.to_date..to.to_date) and pull the results from a hash mapping date to result. Use Hash.new to default the value to 0.

I really cannot think of another solution. Oh, maybe instead of maintaining a table of every date you could use a subselect that creates such results.
This idea is very fuzzy in my mind and potentially impossible.
